This is our first ever Chiroso offering and it is a great representation of what this variety has to offer. We find big florals and a distinct peach juiciness that works so well as a filter coffee or a long "soup" shot!
This coffee undergoes fermentation for 18 hours in cherry, then is depulped and fermented again for 36 hours in open tanks before being dried on raised beds for 2–3 weeks. Victor is deeply passionate about coffee quality, and for the past five years, he has been dedicated not only to refining his own craft but also to uplifting his community and sharing knowledge. His journey is driven by curiosity, generosity, and a commitment to excellence. Victor applies a double fermentation process designed to accentuate the floral sweetness that Chiroso is known for. The result is a beautifully expressive cup that reflects both his technical skill and his dedication to innovation.
