This coffee is full of flavor and is one of the most unique decafs to ever come across our cupping table. Every coffee we've tried from Marlon Bolaños has been truly remarkable. We're incredibly honored to work with Marlon through Unblended and hope to continue this relationship for years to come.
Flavor Profile:
This coffee is intensely flavorful and aromatic from the first sip. While it's hot, we get lots of daaaaaaark fruit and vibrant juiciness. As it cools, the cup transforms, sweet florals emerge, and fluffy marshmallow rounds everything out for a beautifully balanced finish.
In depth processing information:
The cherries arrive at the farm, where they are floated to remove defects before being depulped. The depulped coffee is placed in tanks without water and undergoes a four-day fermentation. After fermentation, the coffee is thoroughly washed to remove the remaining mucilage and prepared for drying. Once dried, the coffee is sent to Descafecol for decaffeination using the sugarcane ethyl acetate (EA) process, a method that preserves sweetness and cup quality while naturally removing caffeine.
